From gilcat2@aol.com Mon Jun 1 14:50:40 1998 Date: 31 May 1998 22:10:03 -0600 From: Gilcat2 Newsgroups: rec.food.recipes Subject: Chicken Fajitas Followup-To: rec.food.recipes The lime juice marinade actually "cooks" the chicken (if it's cut thinly), so all you really need to do is heat them up in a wok or skillet (but be sure to bring the marinade to a full boil to eliminate any potential bacteria): Chicken Fajitas 1/2 cup olive oil 1/3 cup lime juice 1 teaspoon sugar 1/2 teaspoon salt 1/4 teaspoon cumin 1/4 cup red wine vinegar 1/3 cup minced onions 1 teaspoon oregano 1/4 teaspoon pepper 3 cloves minced garlic 1 julienne red bell pepper 1 julienne green bell pepper 1 julienne yellow bell pepper 2 pounds julienne skinless boneless chicken breasts 8 10-inch flour tortillas Combine first 12 ingredients; marinate overnight.
