TOSTADAS DE JAIBA (Crab Tostadas) Mexican source: Better Homes and Gardens serves 8 Cooking oil 8 6-inch tortillas 1 tablespoon lime juice 1 tablespoon olive oil 1/4 teaspoon salt 1/8 teasppoon black pepper 7 1/2 oz canned crab meat, drained, flaked and cartilage removed or fresh cooked 2 canned green chili peppers, rinsed,seeded and chopped 1 small avocado 2 cups shredded lettuce 1 tomato, chopped and drained Lime wedges Bottles hot pepper sauce In heavy skillet heat 1/4 inch oil. Fry tortillas, one at a time, in hot oil for 20-40 seconds on each side or till crisp and golden. Drain on paper toweling. Keep warm in foil in 250 deg. oven. Mix together lime juice, the 1 tablespoons olive oil, salt, and pepper. toss with crab and chili peppers. Divide mixture among torillas. Seed, Peel and cube avocado. top crab and peppers with lettuce, tomato and avocado. Pass lime wedges and hot pepper sauce. Note: I use pita bread instead of tortillas. I brush on melted butter or margarine and toast in oven and keep warm, then stuff when crab is ready.
