It was originally derived from the Spanish sausage of the same name, but has evolved over the last few centuries to be distinctly Mexican. 4 Lbs. pork, ground 2 1/2 Tbsp. salt 12 Tbsp. ground red chile powder 8 dried Habanero chiles, crushed 8 dried Thai chiles, crushed 5 cloves garlic, minced 4 Tbsp. dry Mexican oregano 4 tsp. whole cumin seed, crushed 2 tsp. fresh course ground black pepper 3 tsp. sugar 8 Tbsp. good cider or wine vinegar 5 Tbsp. water Start with cold ground pork. Squeeze the meat with your hands so it is not in clumps. Sprinkle evenly with the rest of the ingredients and mix with your hands. Place the chorizo in your refrigerator and let it season for a couple days. After a couple of days, wrap what you are not going to use and place in the freezer and it will freeze fine for months.
