From I-hate-spam@sorry.com Fri Sep 12 15:33:18 1997 Date: Fri, 5 Sep 1997 21:01:49 -0700 From: Leslie Newsgroups: rec.food.cooking Subject: Green Chili Smothered Burritos Green Chili Smothered Burritos Here's what you need!! - 1 pound tomatillos - 2 cups water - 3 large California peppers (slender and 4-6 inches in length) - 2 cups pinto beans (cooked) - 1/4 cup chopped onions - 1 clove chopped garlic - 6 flour tortillas (steamed corn tortillas for low fat) optionals - 1 serrano pepper seeded and finely diced And here's how you make it!! - peel outer shells of tomatillos and wash - place tomatillos in medium sauce pan, add water and bring to a boil - reduce heat and simmer for 15 minutes. Drain water. - in preheated skillet roast the California peppers until small burnt spots appear on all sides - remove seeds and stems. - in blender mix peppers and half of the tomatillos, until smooth. - add remaining tomatillos (salt to taste) and chop lightly. - in large preheated skillet ,coated with cooking spray, saute onions garlic and serrano peppers - add the pinto beans and half the broth, bring to boil, and reduce heat - simmer 20 minutes. - beans may be left as is or mashed, add additional broth for a thinner filling. - warm the tortillas, fill with bean mix. Finally here is what you do with it!! - Put the tortillas on serving plate and smother with green sauce.
