From macknet@pacbell.net Tue Aug 21 16:50:12 2001 Date: Fri, 17 Aug 2001 01:24:45 -0700 From: Rich McCormack Newsgroups: alt.food.mexican-cooking Subject: Cheese and Chile Quesadillas The subject of quesadillas came up on the newsgroup recently and I intended to send this to the group at the time but it got lost in my email drafts folder. This recipe is a little different in that the tortilla is filled before it's cooked, unlike the usual versions using pre-packaged, pre-cooked corn or flour tortillas. Adapted from a recipe for Traditional Quesadillas found in a 1970s era Mexican cookbook in my collection... 2 cups masa harina 2 tablespoons flour 1/2 teaspoon baking powder 2 tablespoons melted butter 1 egg, lightly beaten 1/2 teaspoon salt 1/2 cup milk Mix the dry ingredients. Add the other ingredients, adding the milk last and only adding enough to make a fairly stiff dough. Form small (3 to 4 inch) tortillas by hand or with a tortilla press. Place a slice of cheese and strip of roasted, peeled chile in the center of the tortilla. Fold over and seal the edges. Fry in hot (400 F.) lard or oil. Drain on absorbent paper and serve hot. -- Rich McCormack (Poway, CA) macknet@pacbell.net Who is Rich McCormack? Find out at... http://home.pacbell.net/macknet/
