Gorditas: 2 dried ancho chilies or 1/2 tsp. crushed red pepper 1 8-oz. can red kidney beans 1 cup water 1-3/4 cups Masa Harina tortilla flour 3/4 tsp. salt 1/2 tsp. baking powder Fat for frying 1-1/2 cups Guacamole Radish slices Discard stems and seeds from chilies; cut up chilies. Cover with boiling water; let stand 45 to 60 minutes; drain. In blender container place soaked chilies or crushed red pepper, undrained beans, water, and 1/2 tsp. salt. Cover and blend until smooth. Combine tortilla flour, and 3/4 tsp. salt, and the baking powder. Add bean mixture; mix well. Cover and let stand 15 minutes. Divide dough into 24 parts; pat each to a 2-inch round. In skillet heat 1/8 inch fat. Fry gorditas about 1-1/2 minutes on each side or until crisp. Drain on paper towel. Top each with 1 Tbsp. Guacamole and a radish slice, if desired. Makes 24.
