The result is a slightly chewy texture and a unique taste that hasn't been achieved in store-bought tortillas. 3 cups all-purpose flour 1 tsp baking powder 1/2 tsp salt 1 1/2 Tbsp vegetable shortening warm water Combine flour, baking powder, and salt in a glass bowl and mix with hands. Add lard and mix again. Add enough water to constitute the dough and form a ball. Rub lard on the outside of the ball and let rest in covered bowl for 30 minutes. Lightly flour surface and pinch smaller amounts of dough from the ball and shape into smaller balls, each a bit larger than a golf ball. Take each ball and flatten with hand, allowing flour on each side. Roll each into a very thin, round tortilla. Cook on a comal or griddle over medium-high heat. Once tortilla has hit the pan, flip only when the first bubble appears. After flipped, the tortilla is done cooking when the first bubble has appeared on the other side.
