From jde@uoguelph.ca Fri Oct 26 11:48:04 2001 Date: 26 Oct 2001 03:31:36 GMT From: Julie A De merchant Newsgroups: rec.food.recipes Subject: Low Fat, Low Cal Fajita Followup-To: rec.food.cooking, rec.food.recipes My own variation Low Fat, Low Cal Fajita 1 onion (red if I have one) 2 garlic cloves 1 red pepper 1 green pepper 1 other pepper, (yellow, orange, hot) 2 medium tomatoes 1 can black beans 1/2 cup salsa 1/4 tsp cumin plain low fat yogurt Flour tortilla (optional) Slice onion and peppers in long strips and cube tomatoes. In a non stick pan spray cooking spray. On low to medium heat fry garlic and onion until transparent. Add peppers and stir until soft. Add tomatoes and cook until warm. Pour contents of the can of black beans. Add salsa or other hot stuff to taste. Season with cumin and cook until consistency look right, not too liquid. Serve with a dollop of yogurt.
