Of olive oil 1/2 medium sized onion chopped 1 clove garlic Olive oil 1 Tbsp. sugar Pinch oregano, parsley 1 bay leaf Shredded Mozzarella cheese Parmesan cheese 1 cup flour Salt and pepper Prepare sauce; Saute garlic onions in olive oil. Add tomato paste, plus three cans of water, mix together and add sugar, salt and pepper to taste, oregano, parsley and bay leaf. Allow to cook 2 hrs. over medium heat. To prepare the eggplant, cut into finely sliced sections, dip in flour then egg mixture. Fry in olive oil until golden brown and tender. Drain. Layer in 9X13 baking dish- eggplant, sauce, and cheeses. Repeat in layers. Bake at 350: for 30-40 minutes. Reserve some of the sauce to pour over individual servings. Stuffed Eggplant 4 medium eggplants 1 cup onions, chopped 1 cup green onions, chopped 4 cloves garlic, chopped 1 cup bell pepper, chopped 1/2 cup celery, chopped 2 bay leaves 1 tsp. Thyme 4 tsps. Salt 1 tsp. black pepper 4 Tbsp bacon grease 1 1/2 lbs. raw shrimp, peeled 1/2 cup butter 1 Tbsp. Worcestershire sauce 1 tsp. Louisiana hot sauce 1 cup seasoned Italian bread crumbs 2 eggs, beaten 1/2 cup parsley, chopped 3 Tbsp lemon juice 8 Tbsp Romano cheese, grated 1 lb. Lump crabmeat 1 cup sharp Cheddar cheese, grated Cut eggplants in half lengthwise and boil in salted water for about 10 minutes or until tender. Scoop out insides and chop finely. Place eggplant shells in a shallow baking dish. Saute onions, green onions, garlic, bell pepper, celery, bay leaves, thyme, salt and pepper in bacon grease for about 15 to 20 minutes. Add chopped eggplant and cook covered for about 30 minutes. In a separate skillet, saute shrimp in butter until they turn pink, about 2 minutes, then add to eggplant mixture. Add Worcestershire sauce, hot sauce, bread crumbs and eggs to eggplant mixture. Stir in parsley and lemon juice. Add cheese. Gently fold in crabmeat. Fill eggplant shells with mixture. Bake uncovered at 350 degrees until hot and browned, about 30 minutes. Serves 8, more if the filling is put in a casserole dish and not in the shells. Cajun Stuffed Eggplant 3 medium eggplants, about 1 lb. Each 1/2 (16 oz. ) pkg. Bacon 1 cup onion 1/2 cup chopped celery 1/2 cup chopped green pepper 4 cloves garlic, minced (or two Tbs. Jar garlic) 1 lb. Ground pork 1 lb. Ground beef 1 1/2 cans Rotel tomatoes, drained (save liquid to add, if necessary) or 1 16 oz. Can diced tomatoes 2 tsp. Italian seasoning Salt, pepper, onion powder, garlic powder, red pepper (to taste) 5 slices bread crumbled 1 small can Parmesan (or to taste) and extra Parmesan for topping Preheat oven to 350 degrees. Place eggplants in water and boil until soft and tender. Split eggplants in half lengthwise. Cool slightly and carefully scoop out pulp, leaving shells intact. Chop pulp and set aside. Cook bacon in a large skillet over medium heat until lightly browned (or cook bacon in microwave, and save grease). Remove bacon and set aside to cool. When cool, crumble bacon into pieces. Add onion, celery, green pepper, pulp and garlic to bacon drippings and cook until onions are transparent. Add pork, beef, tomatoes, and seasonings, cook, until meat is browned, and most of liquid is evaporated. Remove from heat and cool slightly. Stir in bread crumbs, Parmesan cheese and crumbled bacon. Season to taste. Stuff mixture into eggplant shells. Sprinkle tops with additional Parmesan cheese and two pats butter.
