Warm Spinach Salad 1 lb fresh spinach 3 strips bacon 2 medium sized potatoes 2 Tbsp red wine vinegar 1/2 tsp granulated sugar 1 tsp Dijon mustard pinch of salt and cayenne freshly ground black pepper 1/4 lb ham, in tiny cubes (optional) 2 green onions, sliced Wash spinach; dry thoroughly. Tear into bite sized pieces; place in large bowl. Fry bacon in large frying pan until crisp. Meanwhile, cut unpeeled potatoes into 1/4 inch thick slices, then into bite sized pieces. Set aside. Combine vinegar, sugar, mustard and seasonings in small bowl. Whisk together until blended; set aside. When bacon is crisp, remove from pan and crumble over spinach. Add potatoes to bacon fat remaining in pan and stir fry over medium-high heat until almost cooked about 2 to 4 minutes. Then, immediately add ham, green onions and vinegar mixture. Continue to stir fry for 1 minute more. Pour over spinach and bacon; toss until well mixed. Serve immediately.
