From mightymidget69@hotmail.com Mon Mar 15 10:31:58 2004 Date: 12 Mar 2004 08:41:59 -0800 From: tubal cain Newsgroups: uk.food+drink.indian Subject: Bombay vegetable sandwich Bombay vegetable sandwich (serves 4) 8 slices medium white bread, or 4 pitta breads Unsalted butter Coriander chutney (see below) 8oz/225g spicy mashed potatoes (made by mashing hot boiled potatoes with 1 tsp chilli powder, .5 tsp turmeric, 1 tbsp lemon juice, 1 pinch cumin seed and sea salt) 4 finely sliced tomatoes 1 finely sliced red onion 2 finely sliced green peppers Sandwich masala (made with 1 tsp each ground cumin, ground ginger, chilli powder and ground black pepper, all mixed together) Sea salt 8oz/240g grated Gruyere Butter the bread and then turn the slices over so they are butter-side-down on your work surface - messy but worth it. Spread the chutney on the unbuttered side of the bread. Then, on four of the slices, spread the spiced potato, before piling on tomatoes, the onion, peppers, a sprinkling of sandwich masala, salt, and finally the grated cheese. Close the sandwiches with the other 4 slices of bread - chutney inside, butter out. Put the complete sandwiches in a pre-heated sandwich grill and toast to a buttery golden brown. Cut and serve as you wish - with or without crisps, salad and tomato ketchup. Coriander chutney Blend together a bunch of fresh coriander, .25 bunch fresh mint, 4 cloves garlic, 1 tbsp sugar, the juice of a lemon, 3 green chillies (including the seeds) and 1 tsp sea salt.
