Pollo Alla Cacciatore 1 chicken, washed, dried, and cut up in rather small pieces 1 carrot 1 celery stalk 1 onion Garlic Rosemary 1 can pomodori pelati (peeled Roma tomatoes), crushed with a fork (or already crushed in the can) 2 Tablespoons tomato paste 1/2 cup white wine Chicken broth Finely chop the carrot, celery, onion and garlic. Add rosemary to taste, and gently fry until soft in a little olive oil. Add chicken to pan, salt and pepper to taste, and turn up the heat a bit. When chicken turns white, add the white wine to deglaze the pan, and cook it a bit more. Add the crushed tomatoes and tomato paste. Add chicken broth to cover, and let simmer for 30 minutes. This is excellent served with polenta or pasta. Another plus is that it's really simple and easy to make! As for pasta advice, mine is as follows: 1)Buy Italian pasta imported from Italy, not the American-made stuff. Check the label. Barilla is fine, as long as it's from Parma and not from Lincolnshire, IL. 2)Cook it 1 minute under the recommended time, and check check check. Buy extra pasta, because if you miss it and it's too soft, you'll have to throw it out. Or give it to the cats, as did my neighbors in Bocca di Magra. Do you need a dessert recipe? I have an excellent Tiramisu recipe, or Tiramisu Alla Frutta.... And good luck with the in-laws. I bet they love you.
