Here's a recipe i've posted quite a few times... no complains so far & it tastes really good. Malay Chicken Satay 250g Chicken(with a bit of fat) cut into long thin strips(about 3-4cm) Grind the following to a paste in mortar & pestle or blender 5 dried chillies 4 shallots 1 stalk lemon grass 1 tsp ginger 1 tsp galangal 1/2 tsp cumin seeds(dry fried & cooled before pounding) 1 tbsp coriander seeds(dry fried & cooled before pounding) 2 cloves garlic 2 tbsp sugar 1/4 tsp turmeric powder 3 tbsp tamarind water from tamarind pulp(soaked in warm water, squeezed & remove seeds) 1 tbsp salt Oil sugar solution(3 tbsp oil + 1 tbsp sugar dissolved & set aside for brushing) 1 stalk lemon grass, lightly bruised, to be used as brush bamboo sticks, soaked in water for 6hrs. Mix & marinade chicken with all the ingredients + sugar, turmeric, tamarind water & salt. Leave to marinade at least 6hrs or overnight. Wear gloves or oil hands as turmeric will stain hands & fingers. Thread a few pieces of chicken onto each bamboo stick and make sure the tip is covered. An exposed tip will make eating & removing of meat difficult. Before cooking, use the bruised lemon grass to brush oil sugar solution onto each piece of satay. Grill over hot coals, turning frequently. If using a traditional & very hot charcoal satay grill, you might want to wet your hands & quickly sprinkle water onto the hot coals during the grilling process. This gives a steaming/grilling process & cooks the meat nicely. Only do this if your coals are very hot & ash white in colour. You'll need to fan it very often to keep it extremely hot. Alternatively, use a oven grill, salamander or reg. BBQ. DC. serve with compressed rice, raw onions, cucumber & peanut sauce.
