Lamb Vindaloo from Complete Indian Cookery by Mridula Baljekar Grind the following 5 ingredients in a pestle & mortar/coffee grinder: 2 tablespoons coriander seeds 1 tablespoon cumin seeds 6-8 dried red chillies 1 tablespoon mustard seeds 1/2 teaspoon fenugreek seeds 3-4 tablespoons cider vinegar, or white wine vinegar 1 teaspoon ground turmeric 1 inch cube of root ginger, peeled and grated 3-4 cloves garlic, peeled and crushed 2 lbs shoulder/leg of lamb 4 tablespoons oil 1 large onion, chopped 1-2 tsps chilli powder 1 teaspoon paprika 1 1/4 teaspoons salt 450ml/15 fl.oz warm water 2-3 medium potatoes 1 tablespoon chopped, fresh coriander leaves In a large bowl, make a thick paste out of the 5 ground spices with the vinegar. Add the turmeric, ginger and garlic. Mix well. Cut the meat into 1 inch cubes and add it to the mixture. Cover and marinate overnight. Put the meat and spices into a pan and place over a medium heat through, stirring occasionally, for about 5 mins. Cover the pan and cook the meat in its own juice for 15-20 mins or until the liquid is reduced to a thick paste. Stir occasionally. Remove from the heat and keep aside. Heat the oil and fry the onion until soft. Add the meat and fry for 6-8 mins, stirring frequently. Add the chilli powder, paprika and salt. Fry for a further 2-3 mins. Add the water, bring to the boil, cover and simmer for 40-45 mins or until the meat is nearly tender. Add more water if necessary. Meanwhile, peel and wash the potatoes. Cut into 1 inch cubes and add them to the meat. Bring to the boil again, cover the pan and simmer until the potatoes are cooked. Serve and sprinkle with fresh coriander. Phew!! Si
