From heart@gold.net Tue Jun 20 13:22:31 2000 Date: 19 Jun 2000 06:16:01 -0600 From: Zaphod & Trillian Newsgroups: rec.food.recipes Subject: Chicken Vindaloo Followup-To: rec.food.cooking Chicken Vindaloo 2 tsp black mustard seeds 1 tsp cumin seeds 3 Tbsp oil 2 cups minced onion 5 cloves minced garlic 1 inch ginger, minced 1 and 1/2 lb boneless, skinless chicken breasts, cut in 1 inch cubes 1 tsp cinnamon powder 1/2 tsp clove powder 1 Tbsp turmeric 1/4 tsp cayenne 1 Tbsp garam masala 1 Tbsp tamarind concentrate dissolved in hot water 2 tsp lemon juice 1 Tbsp white vinegar 1 tsp brown sugar 1-2 cups water 2 parboiled potatoes, cubed Pop the seeds in the oil. Add onion, garlic and ginger and fry until onion is light brown. Add chicken and cook until chicken is brown. Add the spices and fry for a minute or two.
