From steven@grace74.freeserve.co.uk Mon Jun 16 14:35:23 2003 Date: Fri, 13 Jun 2003 16:14:43 +0100 From: Steven Grace Newsgroups: uk.food+drink.indian Subject: Methi Mutton 500g Mutton 250g Fresh Methi 250g Fresh Spinach 1 teaspoon turmeric 1 tablespoon coriander powder 1 teaspoon garam masala 3 large tomatoes, diced 3 medium onions 8 garlic cloves 2 inch piece of ginger salt to taste chilli powder to taste Sprinkle salt on methi and set to one side for 15 minutes then squeeze dry to remove bitterness. Clean spinach and finely slice. Grind ginger, garlic and onion to a fine paste. Heat 4 tablespoons ghe and fry ground paste to a golden brown colour. Add the tomatoes and cook until ghee floats to the top. Put in Mutton and fry until browned on all sides. Put in ground spices, methi and spinach, cover and cook until mixture turns dry. Pour in 2 cups of hot water. Cover tightly and continue cooking until the mutton is tender (a bloody long time from my experience) and almost dry. Serve hot with bread or rice.
