From merlynne@optushome.com.au Wed Dec 11 09:12:25 2002 Date: Wed, 11 Dec 2002 18:08:39 +1000 From: Lynne King Reply-To: curry@yahoogroups.com Subject: [curry] madraas curry Madras Curry with yoghurt riata Chef: Bruce McClear - Far Horizons - Palm Cove, Cairns Serves Four people You need: Ingredients for Madras curry: 12 dried chillies 2 tsp corriander seeds 2 tsp cummin seeds 1 tsp aniseed 2 cinnamon quills 4 tsp turmeric powder 1 whole coconut grated with milk 5 cloves garlic 2 pieces ginger - peeled and grated 300 mls tamarind pulp 2kgs lamb fresh coriander Ingredients for yoghurt riata: 1 kilo natural yoghurt 50 grams garlic 500 grams grated cucumber 1 bunch of coriander salt pepper Method: Recipe for Madras curry: Dry roast in oven - dried chillies, coriander, cummin, aniseed, cinnamon for about 10 minutes at 180c. Grind to a powder in coffee grinder. Add turmeric. Store in jar. This powder can then be used when making a Madras curry. Simply fry up curry powder in ghee. Then add in lamb, coconut milk, garlic, ginger and tamarind pulp. Serve with fresh coriander. Recipe for yoghurt riata: Simply combine ingredients.
