Here is an old recipe for a Lucknowi Kababbs: 1 tsp pounded green chilli 500 g beef mince 1 medium sized onion *6 whole pepper corns *3 cardamoms *1/4 whole nutmeg *1 /1/2 tsp dhunia/jeera seeds 1 tblsp chana flour(gram flour or pea flour) 1 tblsp sour milk 1/2 cup green grated pawpaw 3 cloves garlic (crushed) *6 whole cloves *2 small pieces of cinanamon 1 tsp red chilli powder salt to taste. Roast ingredients with asterisk in hot oven.Then pound very fine.Squeeze out all moisture from washed mince, using a muslin cloth for the purpose.Put in bowl with the pounded spices.Pound pawpaw and garlic in mortar and add to mince.Grate onions and add to mince. Braise chana flour in a tablespoon of oil and remove from heat when light pink. Allow to cool and add sour milk to it. Add to mince. Put mince through mincer again,mixing all the masalas well in it. Mixture will be sticky so dampen hands and mould in small kebabs. Heat a little oil in tava(griddle) and grill the kebabs in this. for a sauce use what you fancy, or can eat with a nan. Cheers.
