Beef Koftas are particularly good if you like mince dishes. They can be served with rice or chappatis. They can also be served with ^ÓEnglish Side Dishes^Ô such as boiled potatoes, cabbage or cauliflower. Ingredients 25g/1 oz fresh peeled garlic 25g/1 oz fresh peeled ginger 3 green chillies 450g/1 lb minced beef 1 teaspoon salt ? teaspoon chilli powder 2 teaspoons tandoori masala 1 teaspoon garam masala 2 teaspoons tomato purée Small amount chopped fresh green coriander 30ml/1 fl oz cooking oil 2 medium sized onions 55g/2 oz plum peeled tomatoes 300 ml/10 fl oz water Method 1. Place the garlic, ginger and green chillies into a liquidiser and process until finely chopped. 2. Mix the contents of the liquidiser with the mince, salt, chilli powder, tandoori masala, garam masala, tomato purée and fresh green coriander and mix well. Shape the mixture into small meatballs approximately 2 inches in diameter and place them on a tray. Cover the tray. 3. Heat the oil in a large cooking pan. Add the onions and fry until they are golden brown. Now add the tomatoes and cook for a further 2 minutes. 4. Gently place the meatballs in the pan in a single layer. Cover the pan, lower the heat and simmer for about 20 minutes. The meatballs will shrink in size and become golden brown. Simmer gently for another 30 minutes. Add the water and continue to simmer for another 30 to 40 minutes, gently shaking the pan or stirring every 10 minutes. 5.
