The book is written by Thangam E Phillip and is called ^Óflavours from India^Ô. The book was published and printed in India and is dated 1993. The curry is unusual in the small amount of meat called for, however it is written here as it is in the book for you to adapt as you see fit. Ingredients Meatballs 250g meat, without bones 2 green chillies 40g onions 2.5 cm piece ginger Salt to taste For curry 4g red chillies 5g coriander seeds 1.25 cm piece ginger 3g garlic ?g turmeric 3 cloves 1.25 cm piece cinnamon 6 peppercorns ? teaspoon fennel 1 tomato ? coconut Water for grinding of spices and preparation of coconut milk Tempering 10 ml coconut oil 10g ghee A few sprigs of curry leaves 15g red onion A pinch of mustard seeds 2 cardamoms Method · Mince meat with the other meatball ingredients, add salt and form into eight meatballs. · Roast red chillies and coriander seeds and grind together with remaining spices · Grate coconut and extract milk, first thick, second, after grinding, thinner. · Heat oil and ghee. Add mustard seeds. As seeds crackle, add curry leaves and sliced onions. When onions brown add ground spices. · Fry for a further 5 to 10 minutes. · Add second extract of coconut milk. Bring to boil. Add blanched tomato. · Add meatballs one at a time to simmering liquid. · Cook over medium heat for about 20 minutes. · Add first extract of coconut milk. Bring to boil.
