From the Lustre Press in association with the Indian tourism Development Corporation it contains recipes from the chefs of the Ashok Hotel chain, who cook for visiting heads of state etc. Royal Indian Recipes, printed 1997, reprinted 1999 ISBN 81 7437 077 3 (bought from a discount book place) Sample recipe: Murg Aloo Bukhara for the kofta 1kg minced chicken 0.5 tsp cumin powder pinch black cumin posder 0.5 tsp black cardamom powder 0.33 tsp hing 1 tsp red chilli powder 1.tsp fennel seeds 2.66 tbs mustard oil stuffing 16 aloo bukhara (dried plums) sauce 0.5 cup mustard oil 4 cloves 1 tbs red chilli powder 7 cups water 4 green cardamom 4 black cardamom 2 bay leaves (tej patta if available) 1 tbs salt 2 tsp turmeric powder 2 tsp black cardamom powder 1 tsp fennel powder 1 tsp cinnamon powder 1 cup chopped tomatoes 0.33 tsp ginger powder Method Mix together the kofta ingredients Roll 16 balls and stuff a plum into each Put aside Make sauce Heat mustard oil until it begins to smoke Add the cloves and fry until they crackle Add red chilli powder, allow to infuse and stir in water Bring to boil Add remaining whole and powdered spices Lower heat Add kofta and simmer for 25 -30 minutes, until the chicken is cooked and the sauce thickens -- ...ElaineJ...
