Spicy meat rissoles, made with beef, cooked in a creamy sauce with chillies, garlic, curry spices and fresh coriander. Ingredients For the koftas 1kg lean steak mince 2 tablespoons double cream 2 teaspoons finely chopped fresh ginger 2 fresh green or red chillies, finely chopped 3 cloves garlic finely chopped 1 teaspoon mango powder 1½ teaspoons ground coriander 1½ teaspoons garam masala 1¼ teaspoons ground cumin Salt to taste For the cream sauce 1 tablespoon vegetable oil 1 teaspoon cumin seeds 2 bay leaves 2 teaspoons finely chopped fresh ginger 2 fresh green or red chillies, finely chopped 3 cloves garlic finely chopped 284ml double cream 1 teaspoon mango powder ½ teaspoon ground turmeric 1¼ teaspoons ground coriander ½ teaspoon garam masala 1¼ teaspoons ground cumin 3 tablespoons chopped fresh coriander Salt to taste Method 1. To make the kofta place mince, cream, ginger, chillies, garlic, mango powder, ground coriander, garam masala, cumin and salt to taste in a bowl and mix well to combine. Take spoonfuls of mixture and, using wet hands, mould mixture into oval shapes or rissoles and place in a steamer. Place steamer over pan of boiling water and steam for 15 to 20 minutes or until kofta is just cooked. 2. Remove kofta from steamer and place in a shallow ovenproof dish. Set aside. Preheat oven to 150C/300F/Gas 2. 3. To make sauce, heat oil in a saucepan over a low heat, add cumin seeds, bay leaves, ginger, chillies and garlic and cook for 2 minutes. Stir in cream, mango powder, turmeric, ground coriander, garam masala and cumin and cook, stirring constantly, for 10 minutes. Remove sauce from heat, stir in fresh coriander and season to taste with salt. Spoon sauce over kofta, cover and bake in the preheated oven for 20 minutes.
