He cooks it at dinner parties and asked me to give it a go to see what I think. Kerala Prawn Curry (Serves 4 - 6) Ingredients... 1 lb large raw tiger prawns 4 tsp. wine vinegar 4 large dry red chillies 6 tbsps desiccated coconut 1 tsp. mustard seeds 1 large onion, sliced 4 tbsps vegetable oil 10 curry leaves Coriander leaves to garnish 2 " fresh ginger, crushed 2 cloves garlic, crushed 1 tsp. ground turmeric 1 tbsp ground coriander 1 tsp. chilli powder 2 large tomatoes, chopped 4 fl oz hot water salt to taste Instructions... 1.Shell and devein prawns. Rub them with a little salt and 2 tsp vinegar and set aside. 2.Dry roast the chillies, coconut, mustard seeds and onion then blend them to a fine paste. 3.Heat the oil in a wok and fry curry leaves for 1 minute. Reduce heat and add ginger and garlic. Fry for a few minutes until the raw smell disappears. 4.Add turmeric, ground coriander, chilli powder and the masala. Stir and fry until the oil separates. Add the tomatoes, salt and hot water. Bring to a boil and simmer for 5 minutes. 5.Drain prawns, add them to the gravy and mix well. Cook for 5-10 minutes. Add the remaining vinegar and cook for 2 mins more. Garnish with coriander leaves and serve hot.
