And also, has anyone been able to get on to the yahoogroups website, I haven't been able to access it for over 24hrs now. Balti Masala Mix Whole Spices - 50g coriander seeds, 30g white cumin seeds, 15g cassia bark, 10g fennel seeds, 10g black mustard seeds, 8g green cardamon seeds, 4g fenugreek seeds, 4g lovage seeds, 3g wild onion seeds (Nigella??), 3g cloves, 2g fenugreek leaves, 5 bay leaves, 2g curry leaves Ground Spices - 20g turmeric, 20g garlic powder, 10g ground ginger, 8g chilli Roast and grind the whole spices, mix with the ground spices. It's then best to turn this into a paste by mixing with about 200ml of vinegar and enough water to make a creamy paste. Then heat approx. 200ml of oil, add the paste and cook until the oil floats (ie. the oil sits on top of the paste when taken off the heat for a couple of minutes) this usually takes about 5 minutes. And a recipe to use it in - a medium Chicken Balti 600g chicken, cut into cubes 2-3 tbsp of ghee or oil 3-6 cloves garlic 225g onion finally chopped (which is one medium onion??) 3-4 tbsp of the paste 200ml chicken stock or water 1 tbsp garam masala 1 tbsp finely chopped coriander leaves (cilantro) salt or the aromatic salt that Chapman uses 1. Heat the oil and fry the garlic for 30 seconds, add the onion, reduce heat a cook until translucent and starting to brown (10 minutes). 2. Add the paste and chicken, increase heat and stir fry for about 5 minutes 3. A stock, lower heat and cook for 10 minutes. 4. Check chicken is cooked, then add garam masala, salt, and the coriander leaves You can also do the same thing with Chicken Tikka instead of ordinary chicken (but cook it first) - I would add any left over marinade with Balti paste, Have a good day everyone - and if you want to buy a new CD get the new Pulp one - We Love Life - fantastic.
