Ingredients 2 lb (1kg) cod fillet, skinned & cut into 4-6 pieces 6 oz (175g) onions 2 cloves garlic, peeled & finely chopped 14 oz (400g) tin chopped tomatoes Spices 1 1/2 tsp of salt 1/2 tsp cayenne pepper 1/2 tsp turmeric Spices 2 1 tsp whole fennel seeeds 1 tsp whole mustard seeds Spices 3 2 tsp ground cumin 1 tsp salt 1/4 tsp cayenne pepper Spices 4 1/2 tsp garam masala Vegetable oil Method Coat both sides of the cod pieces with spices 1. Set aside for 30 minutes. Heat 4 tablespoons vegetable oil in a saucepan, when hot, add spices 2 then a few seconds later, the onion and garlic. Lightly brown the onions then add spices 3, stir for a few seconds and put in the tomatoes, their liquid and spices 4. Bring to a boil, cover & simmer gently for 15 mins. Shallow fry the cod pieces. Brown them on both sides then lift them from the oil and place them in a baking dish. Do not cook through. Pour the tomato mixture over the cod & bake in the oven at 180C/350F/Gas 4 for 10-15 minutes depending on the thickness of the fillets.
