From mightymidget69@hotmail.com Mon Mar 15 10:29:51 2004 Date: 12 Mar 2004 08:38:44 -0800 From: tubal cain Newsgroups: uk.food+drink.indian Subject: Pau bhaji Pau bhaji (serves 4) 1 lb/450g floury potatoes 7oz/200g cauliflower 2oz/60g shelled green peas or frozen peas 1 medium carrot 1 medium onion 1oz/30g root ginger 6 cloves garlic Olive or vegetable oil 2 green peppers 2 tomatoes, chopped .5 tsp garam masala .5 tsp chili powder 1 lemon 4oz/110g unsalted butter .25 bunch fresh coriander 8 baps sliced in half (horizontally) 1 small red onion Boil or steam the potatoes, cauliflower, peas and carrot and chop them small. Finely chop the onion, ginger and garlic, and saute in a little oil until soft. Finely chop the peppers and add to the onion mixture, along with the cooked vegetables, tomatoes, garam masala and chilli. Cook on a low heat, mashing the vegetables. Add the lemon juice, half the butter and half the coriander and cook for a further 5 minutes. To serve, spoon the vegetables on to a plate, sprinkle with the remaining coriander and chopped red onion (if desired) and serve with two halves of bap, spread with the remaining butter, per person.
