Sag Aloo (Curried Spinach And Potatoes) Serves: 4 (3 with portions that big!) Cooking Time: 20 minutes Vegetable oil or vegetable ghee 1 potato, peeled and diced 1 onion, sliced 1 clove garlic, sliced 1tsp grated ginger root - optional 2 cardamom pods - optional 1/2 tsp fennel seeds - optional 1/4 tsp ground cumin 1/4 tsp ground turmeric 1/2 tsp ground coriander 1/4 tsp chilli powder 250g (9 oz) fresh spinach. (8 mini portions if using frozen spinach). 1/4 tsp salt A dash of lemon juice Pour some boiling water into a saucepan and boil the potato cubes for a few minutes until almost cooked. Heat oil or ghee in a saucepan over medium heat and fry onion and spices until onion is slightly browned. Add spinach and drained potato cubes and turn down heat.
