I did not know about the starring ingredient )poha) until my friend gave me this recipe, and now I am addicted. Poha is beaten rice - kinda looks like white flakes. I found it easily at my Indian grocer. If you have a choice between thick and thin, please buy the thick poha. Sorry the recipe is not more explicit in amounts; that is how it was described to me. Once you have made it and tasted it, you can play around with the amounts in the future. I am guessing that this makes about 4 - 6 servings, and it reheats pretty well. I know my friend and her Punjabi husband eat this for breakfast... Ingredients 3 - 4 cups poha 2 tablespoons ghee OR olive oil OR vegetable oil cumin and mustard seeds - start with a teaspoon of each 3 - 4 curry leaves 5 - 6 green chilies (according to taste), minced 1" fresh ginger, minced 2 cloves of garlic A couple pinches of turmeric 1 small onion 1 carrot, chopped into thin rounds handful of chopped cilantro Run poha under running water in a colader to rinse and allow it to soak up some water. You want it to be just wet enough where it will not be soaked, but simply damp. Heat the ghee/oil, and throw in the cumin and mustard seeds, as well as the curry leaves. When the seeds just start to pop (watch out!), add the chilies, ginger, garlic, onion, turmeric, and carrots. Cook until the onion is opaque but not brown. Add the poha, and mix well with the other ingredients. Warm thoroughly. Add the cilantro right at the end, and serve.
