From mandeep_cheema2002@yahoo.co.ie Mon Mar 17 10:33:37 2003 Date: 16 Mar 2003 19:51:09 GMT From: Mandeep Cheema Newsgroups: uk.food+drink.indian Subject: Make ahead Persian Curry Sauce Make ahead Persian Curry Sauce This is a basic make ahead curry sauce that is one of three basic sauces used by Indian families; each family will have their own variations on the same theme 150g ghee Salt to taste 1 teaspoon chilli powder 1 teaspoon turmeric 1 tablespoon ginger paste 1 tablespoon garlic paste 1 tablespoon poppy seed paste 1 teaspoon ground fenugreek 10 green cardamoms 2 tablespoons almonds paste 150ml water 200g yoghurt 1 teaspoon cornflour 2 tablespoons cream 0.5 teaspoon saffron 2 tablespoons milk 20 almonds for garnish Soak saffron in 2 tablespoons milk and set to one side. Roast garnish almonds and cut into thin slivers then set to one side. Beat yoghurt with cornflour and set to one side. Mix together ginger, garlic and poppy seed paste with the ground fenugreek to achieve a smooth paste. Heat ghee in a heavy bottomed pan, add chilli powder and turmeric and fry for 10 seconds. Add the ginger, garlic and poppy seed paste and stir-fry for 3 to 4 minutes. Reduce heat. Add cardamoms and almond paste and stir-fry over a moderate heat for 5 to 10 minutes until ghee starts to separate. Add the water and the yoghurt/cornflour mix and salt to taste. Stir gently and simmer for 5 to 8 minutes. Add the cream to the saffron/milk mix and stir gently into the sauce. Sprinkle with the garnish almonds. This sauce is suitable for pre-cooked meat, fish or chicken by baking in a moderate oven for 10 minutes. For a standard Persian curry 500g of meat should be added after the water and yoghurt/cornflour mix. Increase salt to taste and simmer for 20 minutes until the meat is cooked through. Follow the remainder of the recipe.
