It is usually found in dosais as a filling and also eaten with Poories ( Poori Palya ) 1 kg potatoes 2 large onions 200 g Tomatoes 4 tablespoons veg oil 5 curry leaves 3/4 teaspoonTurmeric 2 teaspoon of mustard seeds 1 1/4 teaspoon of salt 3/4 chilli powder and last of all a bit of water (1/4 pint) Peel and cut the potatoes into small pieces 1 inch cubes use a heavy saucepan and heat the oil to very hot, this is when u add the mustard seeds, they will begin to burst and pop, cover the pan so that they don't fly away out of the pan. Add the curry leaves, crush them a bit before hand. Lower the heat now and add the tumeric , salt and the chilli powder and stir for a minute. Now add the potatoes and fry for a minute or two, u may have to put up the heat when the cold potatoes hit the pan. Chop and add the onions and the tomatoes and the water. Once all is cooking well, lower the heat and simmer cook for further 10 minutes or so until the potatoes are done. If it is still too liquid, then dry it out further by evaporating the liquid by heat. A drop of lemon juice added might taste nice too. The potatoes should be done to the consistency of breaking down easily, the cubes begin to look rounded, if u know what I mean ! And Jane, get your dosa ready, lying flat on its back, put a tablespoon or two of the palya in the middle of it and fold over the dosa like a great big cigar. U can eat Palya with poories, chappaties or even make a sandwich !
