From steven@grace74.freeserve.co.uk Mon Jun 16 14:38:37 2003 Date: Sun, 15 Jun 2003 06:45:48 +0100 From: Steven Grace Newsgroups: uk.food+drink.indian Subject: Methi Aloo 250g potatoes, peeled and cubed 2 bunches fenugreek leaves, cleaned 2 cloves garlic chopped 1 large onion, finely chopped 100g tomatoes, peeled and diced 4 green chillies, de-seeded and chopped 1 tablespoon ground coriander 1/2 teaspoon turmeric salt and chilli powder to taste. Sprinkle salt on leaves and put to one side for 15 minutes, then squeeze dry to remove bitterness. Heat 2 tablespoons ghee and fry onion and garlic until soft. Put in potatoes and fry for 5 minutes. Add fenugreek, spices and salt and cook until dry. Put in tomatoes, cover tightly and cook until the potatoes are soft. Serve hot
