Lea Ann, sounds like you were very lucky! Talking about ovens reminds me that I STILL haven't had a reply about the tandoor oven liner. I guess I'll have to bite the bullet and just call India! What's more, there's also a Chinese take-away, a very good fish and chip shop and a pub all within a few yards of the Indian restaurant! If your order gets cancelled, I'm sure I can get a copy and post it off to you. Chana Masala is simply chick peas cooked in a curry sauce with extra garlic, and onions, and is absolutely gorgeous! I've made up two recipes, one which uses the base curry sauce, and one that's made from scratch if you have no base sauce available. The two methods are as follows; Non-Base sauce version ================= Ingredients 1 225g Tin of Chick Peas 2-4 tbsp Vegetable Oil ¼ Small Onion, chopped 4 Cloves Garlic, chopped or crushed 1/2 Tin plum tomatoes, blended until smooth 2 tsp Tomato Puree ¼ tsp Salt ½ tsp Ground Turmeric 1 tsp Ground Cumin 1 tsp Ground Coriander ½ tsp Chilli Powder ½ tsp Amchoor Powder ½ tsp Fenugreek Powder ½ tsp Garam Masala Chopped Coriander to garnish Method Chop the onion and garlic. Heat oil on a medium heat in a saucepan. Add the Turmeric, cook for 4-5 seconds while stirring continuously. Be careful not to burn the turmeric.Add the Onion and Garlic, and stir-fry until golden brown. Add the liquidised plum tomatoes.Add the tomato puree and cook for 3-4 minutes. Add the ground spices and cook for about five minutes, or until sauce thickens. Completely drain the chick peas, and add to the saucepan with the salt, mix well. Turn down the heat and add Garam Masala and cook for 3-4 minutes Serve sprinkled with chopped fresh coriander Base Sauce Version - note, very, very similar to above, just replace the tomatoes with curry sauce! This has a creamier, softer and (I think) better flavour than the non-base sauce version. =============== Ingredients 1/2 Pint Base Curry Sauce 2-4 tbsp Vegetable Oil ½ tsp Turmeric ¼ Onion, chopped 4 Cloves Garlic, chopped or crushed 2 tsp Tomato Puree 1 tsp Ground Cumin 1 tsp Ground Coriander ½ tsp Chilli Powder ½ tsp Amchoor Powder ½ tsp Fenugreek Powder 1 225g Tin of Chick Peas ¼ tsp Salt ½ tsp Garam Masala Chopped Coriander to garnish Method Chop the onion and garlic. Heat oil on a medium heat in a saucepan. Add the Turmeric, cook for 4-5 seconds while stirring continuously. Be careful not to burn the turmeric as this will taste bitter and ruin the dish.Add the Onion and Garlic, and stir-fry until golden brown. Add the curry sauce and tomato puree and bring to the boil. Turn down the heat to a simmer. Cook for 2-3 minutes. Add the ground spices and cook for about three minutes, or until sauce thickens. Drain the chick peas, add to the saucepan with the salt, mix well. Turn down the heat and add Garam Masala and cook for 3-4 minutes Serve sprinkled with chopped fresh coriander Have fun! I had turned it on to bake some cookies and while it was heating I was wandering around the kitchen doing something *can't recall* and the back of my arm brushed the front of the oven, it blew me back at least a foot and burned the heck out of my arm. So I can now say that I believe electrocution to be a very unpleasant way to die. *giggle* How can you stand to smell all those wonderful cooking smells so close to your house everyday? Lucky you (or maybe not) No, no sign of the curry secret yet. I hope they do not cancel my order....I am really looking forward to that book! We may have chicken Korma today as well....you description sounds lovely..tell me more about the Chana Masala... I miss all the posts here!!!! Fall is here and I know we will all be making a LOT of curry now. It's already 10:00 AM here in Kansas. I have an opera lesson at 2:30..."Se tu M'ami" from Pergolessi...anyone else here like opera? No? *ha ha ha* well okay. Have a lovely day everyone!! Lea Ann Yahoo! Groups Sponsor ADVERTISEMENT Your use of Yahoo! Groups is subject to the Yahoo! Terms of Service .
