Bring to boil and boil for 5 minutes. Gradually stir in coffee, using a wire whisk; cool. Pour into tall bottle, jar, etc; add vodka and vanilla and mix thoroughly. Cover and let stand at least 2 weeks. Remove vanilla bean. Good as after dinner liqueur, over fruit or ice cream. Can also be used to flavor Bavarians or eggnog pies. Makes about 5 cups. Coffee Liqueur 3 cups vodka 2 cups water 2 cups granulated sugar 2 cups packed brown sugar 2/3 cup freeze-dried coffee 1 vanilla bean or 1 tsp. vanilla Mix all ingredients in a 2-quart jar. Cover tightly and let stand at room temperature 2 weeks. Pour liqueur into bottles and seal. Makes about 7 1/2 cups liqueur. Coffee Liqueur 2 cups water 4 1/2 cups granulated sugar 4 tsp. instant coffee Drop of vanilla extract 1 cup brandy 1 cup rum In a saucepan, combine water, sugar, coffee and vanilla. Heat gently stirring until sugar and coffee dissolves. Cool. Stir in brandy and rum into the syrup. Pour into a jar and seal. Allow to mellow 2-3 weeks.
