Talk about confusion! Each community has their own unique ways of cooking n this is a Teo Chew style of steaming their fish. Make sure the fish is fresh fresh fresh or else it wont taste very good. Any white flesh fish will do and for me, I used a white pomfret - compliments of my mother! No she is not "fisherwoman"- she prides herself on getting fresh fish from the market for her daughter/son-in-law when the latter returns home to visit every month. 500 white pomfret (cleaned, make 2 slits on both sides of fish) 1/4 tsp salt 1 tomato sliced 2 seeds of pickled plums (sim mooi) 30 gr ginger, shredded 50 gr salted vegetable, shredded 1 red chilli, sliced or made into chilli curls 1 stalk fresh coriander : use leaves to garnish 1 Tbsp soya sauce 3 pips garlic, chopped and fried with 2 Tbsp oil dash of pepper Place the fish on a plate and rub all over with salt and pickled plums. Arrange the ginger, salted vegetable and tomato around and in the stomach of the fish. Steam dressed fish for about 15-20 minutes till cooked. Flavour the fish with soya sauce, garlic oil and pepper and garnish with chilli and coriander. Serve immediately.
