I am a novice at Chinese cooking. Thanks in advance! Pork Lo Mein Categories: Pork, Chinese, Meats Yield: 4 servings 2 Tbsp Sesame oil 2 Tbsp Vegetable oil 1 tsp Ginger; finely chopped 2 cup Bok choy; cut into 1/2-inch -pieces 1 1/2 cup Bean sprout 8 oz Chinese barbecue pork 1/2 cup Chicken broth 2 Tbsp Oyster sauce 1 Tbsp Soy;dark 1/2 tsp Sugar Pepper;dash 8 oz Lo Mein noodles Cook noodles in plenty of boiling water; when al dente, drain and toss with sesame oil, set aside. Combine sauce ingredients, set aside. Heat wok, add oil. Add ginger stir fry until fragrant (about 10 sec). Add bok choy, bean sprouts and pork, stir fry 2 minutes. Then add broth. When broth is hot, add noodles, cover and cook 2 minutes. Add sauce, stir well and serve. Variations, instead of pork, use left over cooked, roast beef, lamb, shrimp or chicken. Other fresh vegetables in season can be used in place of the sprouts and bok choy. From "Dim Sum" by Ruth Laws. Lo Mein Although this is for beef lo mein, just substitute chicken or shrimp. This is from the Chinese Village Cookbook by Rhoda Yee. It is great, and kids love it! 1/2 lb egg noodles (I use the 12 oz package) 1/2 lb flank steak 1 tsp. cornstarch 1 Tbsp. light soy sauce 1 tsp. sherry 1 clove garlic, crushed sauce mixture - 1 Tbsp. cornstarch 1 cup chicken stock 1 Tbsp. soy sauce 2 Tbsp. oyster sauce 1 tsp sesame oil 1 stalk green onion,diced 2 tbsp. oil Par boil fresh egg noodles for 3 minutes. Rinse with cold water and drain. Slice beef into 1/8-inch strips across the grain. Marinate for 15 minutes. Prepare sauce mixture. Have a pot of hot water ready. Heat wok. Add 2 Tbsp. oil and reheat. Add garlic; brown. Discard. Add beef and salt stir until 3/4 done. Add sauce mixture and stir until thickened. Add green onions and sesame oil. Mix well and keep warm. Drop noodles into hot water. Stir for a minute to heat. Drain well. Pour meat and sauce over noodles. LO MEIN SHRIMP-CHICKEN-PORK-BEEF Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Chinese Pasta Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoon Peanut oil 1/2 pound Flank steak ;or shrimp -- por 2 Celery -- shredded 2 slices Ginger -- minced 1 cup Cabbage 1 Green onion;scallion -- mince 2 teaspoon Cornstarch 1/2 pound Spaghetti -- or Chinese noodle 1/2 teaspoon Sugar 1 tablespoon Soy sauce -- light soy 1/2 teaspoon Salt -- optional Cook spaghetti as directed on package, al dente, drain, rinse in cold water, add a few drops oil and mix to keep from sticking. Set aside. Slice steak very thin, across the grain, 2" pieces. Mix together, steak, ginger, scallion, cornstarch, sugar, light soy, set aside to marinate. Heat wok to smoking, add 2 Tbsp oil. Stir fry meat mixture two minutes, do not overcook, Reserve. Add 2 Tbsp oil, heat, stir fry carrots and cabbage two minutes, add spaghetti, stir well and cook a few minutes, add meat mixture, 1 Tbsp soy and salt. stir a minute to heat and serve. Nice thing about stir fry cooking, just about anything goes.
