Newsgroups: uk.food+drink.chinese Subject: fried rice with yam & veg Kick starting this newsgroup again with a short series of Chinese home styled dishes. Home style 'fried rice' with yam & vegs. 500g fresh chicken cut into bite size pieces 8 cups rice washed 30g dried shrimps 20g dried oysters or 4-6 tbsp oyster sauce 400g Chinese mustard leaves or any green leafy veg/kale etc. 200g yam peeled & cubed 8 cloves garlic sliced or minced 8 shallots sliced 2 tbsp light soya sauce 2 tsp salt 8 cups water 3 tbsp veg oil. Heat wok & fry garlic until fragrant before adding washed rice & soya sauce, strifry for 2mins. Next add in cubed yam, vegs, dried shrimps, chicken pieces & dried oysters or oyster sauce & continue cooking for a few more minutes. Pour everything into a rice cooker, add water for cooking rice & steam/cook rice as per normal. In the meantime, fry shallots in oil until crispy. Garnish cripsy shallots over rice once ready.
