Newsgroups: uk.food+drink.chinese Subject: fried prawn balls Kick starting this newsgroup again with a short series of Chinese home styled dishes Home made fried prawn balls 1 thick slice stale white bread 400g fresh prawns 60g pork fat/lard 4 whole water chestnuts 1/2 inch ginger finely sliced or minced 1/2 tsp salt 1 egg yolk & whites seperated oil for deep frying Remove crusts from stale bread & wet bread with water. Mince prawns with pork fat/lard until paste like & add finely chopped water chestnuts, minced ginger, salt & egg yolk. Next add soaked stale wet bread & mix thoroughly & leave aside to bind. Beat the egg white to stiff & add to prawn ball mixture. Heat oil for deep frying. When oil is ready, wet your hands & make prawn balls & deep fry until golden brown. DC.
