Newsgroups: uk.food+drink.chinese Subject: stuffed dried mushrooms with broccoli Kick starting this newsgroup again with a short series of Chinese home styled dishes stuffed dried mushrooms with broccoli 12 large dried Chinese mushrooms 1 tbsp oil 2 cloves garlic, minced 1/2 chicken stock cube 2 tsp cornflour 1 tbsp cold water broccoli 250g fresh prawns 100g fresh crab meat 3 water chestnuts 1 tbsp pork fat/lard 1/2 tsp salt white pepper Pluck stalk off dried mushrooms & keep for use in stocks or soups etc. Rehydrate dried mushrooms with warm water, keep the soaking water after. Once rehydrated, squeeze dry the mushrooms & dry. Heat oil & fry garlic until fragrant then add mushroom pieces for about 1min. then add mushroom soaking water & stock cube & simmer & braise until mushrooms are tender. Remove mushrooms from wok leaving the cooking liquid & set aside. Thicken the cooking liquid by cooking it further with 1 tsp cornflour watered down. Set the sauce aside for later. Make prawn stuffing by mincing prawns, water chestnuts, crabmeat, pork lard, salt & pepper into a sticky paste. When all the mushrooms have cooled down a little, sprinkle a little cornflour inside the caps & begin stuffing with prawn mixture to form a little mound. Place stuffed mushrooms in the centre of a plate & sliced broccoli pieces around it. Now steam the plate of stuffed mushrooms & broccoli until cooked & pour the sauce over it & serve. DC.
