From neris@home.com Sun Jan 16 17:33:00 2000 Date: Mon, 10 Jan 2000 09:44:09 -0800 From: Neris Newsgroups: rec.food.recipes Subject: Butterfield Stageline Chili Followup-To: rec.food.cooking 1981 World Champ Butterfield Stageline Chili Yield: 25 Servings 4 Medium Onions, Minced 2 Lb Ground Pork 1 Tbsp Cumin 1 Oz Tequila 10 Lb Lean Beef Brisket, Finely Chopped 7 Oz Whole Green Chiles; Minced 1 Tsp Salt 1 Can Beer 1/4 Cup Oil 15 Oz Tomato Sauce 1 Tsp Oregano 3 Oz Chili Powder 1 1/2 Cloves Garlic; Minced 1 Lb Whole Tomatoes; Finely Chopped 1 Tbsp Dry Mustard 2 Beef Bouillon Cubes Brown onions, and beef in oil. Stir in garlic, pork, chiles, cumin, oregano, salt, dry mustard, tomato sauce, tomatoes, tequila, beer, chili powder and bouillon cubes. Bring to boil then reduce heat and simmer 2-3 hours.
