You can make it with beans or without. The heat depends on the type of chile you use. This recipe makes 6-8 servings. 1 cup dried pinto beans, washed and free of debris Cover beans with water and soak for at least 12 hours or overnight. Soaked beans 1 quart Beef broth, preferably homemade, but store-bought is all right, low-sodium 1 yellow onion, chopped Place beans, broth and onion in a 4 quart pot and bring to a boil. Reduce heat and simmer, partially covered for 1 hour. Do not allow broth to run out. Replenish as needed. 7-9 Hot or mild New Mexico dried chilies water Rinse chilies and remove stems and seeds. Place chilies in a pot and cover with water. Bring to a boil. Cover and remove from heat. Allow chilies to steep for about 30 minutes, until soft and pliable. Blend chilies with a bit of the water in a food processor or a blender until the consistency of tomato sauce. Force through a fine sieve. You should have about 1 1/2 cups. 3 pounds beef chuck, sirloin, or rump roast 1 yellow onion, chopped 1 15 oz can Mexican-style tomatoes (they have green chile in them) 1 clove garlic, crushed, or more to taste beef broth or water olive oil Cut meat into chunks, about 1" X 1". Heat oil in a large Dutch oven or pot. Brown the meat on all sides. Add onion, and cook until translucent. Add tomatoes and garlic and enough beef broth to cover. Add chile puree. Add beans (which have already cooked for 1 hour) and their liquid. Cover and cook over very low heat for about 2 hours, until meat is tender when pierced and all the flavors have combined. Be careful not to allow the broth to run dry. The juices will have thickened and it should be a dark red. Add more broth, if needed. Garnish with sour cream, cheddar cheese and green onion.
